Milling grain the gentle way

I am sure our position on industrially milled grain is clear.  We believe you should use gently milled grain if at all possible.  When grain is gently milled it retains more of its natural goodness and that is a Good Thing.  The best (BEST) mill – define it how you will – that we have come across so far is operated by Ben Johnson.  I am sure you would agree if you could see it.  And here it is!

Sadly it only does (ONLY??) one kg of flour every five minutes so I guess it won’t be available at supermarkets any time soon but I am sure Ben would explain how you can make one for yourself if you would like to!  You can contact him through his great blog.
