As winter mornings continue to plague me I seem to get up later and later even though I seem to go to bed earlier and earlier. I just get bored in the evenings and find myself in bed by about 9.30 and, because it is dark, I don’t get up until about 7! It is so hard to get up and motivated when it is cold and dark. Consequently, a quick breakfast is critical – I have less time between when I get up and when I need to get out the door! Now, when I say “quick breakfast” I really do mean quick and I really do mean breakfast. All nutritional studies demonstrate that breakfast holds the key to good performance during the day and if you want to lose weight, a good breakfast, full of food that keeps you from getting hungry just hours after you have eaten it, is important. So, without further delay, here are two ideas for including fresh, delicious bread in your quick and fantastically nutritious breakfast.
Idea Number One:
On days you need to shower and don’t have 10-15 minutes to prepare your breakfast, you can still bake some of the easiest bread rolls in the world. It’s called parallel processing!
The joy of these bread rolls is that you prepare the dough the night before. You don’t have to knead it, you just pop all the ingredients into a bowl and stir. Put the bowl in the fridge and bake them the next day while you are having your shower. 20 minutes in a hot oven and you have fresh bread for instant consumption and/or taking to school or work as part of a yummy lunch. Idea Number Two:
On days you don’t necessarily need to shower and/or have 10 minutes to actually prepare your breakfast you can make some skillet bread. Skillet bread is just that – bread made in a skillet (frying pan) – and includes corn bread, tortillas and roti. I just came across a great recipe from the Week End Bakery which does call for yeast (normally meaning at least a 60 minute delay) so here is my idea for the busy morning person who does not have 60 minutes. Follow the recipe attached to the link the night before you want the bread. Once you knead it, pop it back in the mixing bowl, cover it, and put it in the fridge to rise overnight. In the morning, take it out, divide it into pieces and then flatten and fry it just like it calls for in the recipe. Remember you can always use whole wheat or spelt flour in place of the white wheat flour in the recipe.
So, 20 minutes for hot buns while you take your shower or 10 minutes for hot skillet bread while you listen to the radio and cook some eggs. Either way – divine, well fermented, easy to digest, healthy, tasty, nutritious (how much more can I fit in) VIRTUOUS bread – for breakfast to set you up for a fantastic day.
